Elderflower Cordial

This is a summer classic, easy as anything to make, not bad with vodka. Procure:

Put the sugar in the container, then pour over a pint of boiling water and stir till sugar dissolved. Add 2 litres of cold water and a leave until colder-than-tepid. Add the lemons (giving each slice a small squeeze) and the elderflowers. Leave for 24 hours, stirring occasionally, then filter through muslin or filter paper into bottles. Refrigerate - it'll keep for a few weeks.
